The freshly picked blossoms and calyxes are carefully packaged and quickly brought on their way to be formed into blooming teas.  The creation of these small pieces of art somewhat  reminds of the Japanese art arranging flowers and requires delicate handling so that we will later be able to enjoy a wonderful picture of tea and blossom in the teapot.  During the infusion a glowing amaranth blossom slowly opens up, circled by delicate tea leaf tips, its color reminds of precious stone.  The cup show a color of ripe apricots; the tongue will experience a flowery taste.


Ingredients:  green tea, amaranth blossoms.


Recommendations: Use 1 ball per 6-8 oz. cup: heat fresh, cold water until it is steaming briskly (176°-190°: F); let steep for 1-3 min. Good for multiple infusions.
